There are dozens of “healthy food easy to make” recipes I have learned over the years but before I share with you several recipes here please feel free to check what is healthy food article so we both are singing the same song so to speak.
Here is how I plan for it and I hope it will help you. I think it will find enlightening, simple, and easy to do. As you see in the above image the animal proteins and fat make my entrée whether I’m planning for lunch or dinner and my lunch is usually smaller and faster to make than dinner but still both are simple and fairly quick to make. It is going to be:
Almost everything is prepared during the weekend but you choose your preferred day for food preparation and cooking.
Lunch Time: Animal-based meal
Supplementary to my main meal would be some nuts, raw carrots, sweet peppers, cucumbers, and one or two pieces of dried fruits such as dates, figs, apricots. (time: less than 5 minutes)
Dinner one: Beef stew with a few pieces of bone marrow cooked with either mushroom (I love shiitake), potatoes, carrots, or all of them but it will take more time due to washing, dicing, and chopping. This should last you 2-4 days. (time: less than 40 minutes)
Dinner two: whole chicken cut in pieces and placed in a slow-cooking electric crockpot. Add your favorite spices and some veggies. It will cook between 6-8 hours which you don’t have to do anything else after you put all the ingredients in the crockpot. It will be ready for you after you’re back from work, running errands, or watching War & Peace episodes ;-)
Dinner three: Replace the whole chicken with oxtails. It will take 6-8 hours in the electric crockpot. I like to add a head of garlic, sliced onions, and a few spices of your choice. If you want to add a second step (more time) cook brown rice with the oxtail cooked broth, yummy!
As you see, lunches can be prepared within a few minutes all you need is ahead-of-time quick planning and you are all set. The same thing for dinner meals, plan for the whole week. The slow cooker I use is 3.5 Quarts capacity, therefore, the food can last me 4-5 days easily for dinner meals.
